We first produced this new white wine made from our Vernaccia di San Gimignano in 2021, but without certification, which is why it is bottled as a simple Bianco Toscano. Definitely a striking wine, the new favourite of many guests who return to the estate and discover this pleasant surprise. Part of the wine ages in French oak barriques for nine months before being added back to the younger, fresher part. “Maria Assunta” is the mother of Susanna (owner and manager of the cellar) and this wine reflects all her qualities: pleasant, structured and more complex than Consesta, it improves with time and is definitely a wine to be shared. Ageing in small French wood barrels conveys a beautiful golden colour and captivating notes of ripe fruit and nuts.
Excellent with medium-mature cheeses and fish, it reaches its finest expression with white meats and salmon.
